Black Bean and Avocado Stuffed Sweet Potatoes
Mmmm... these are ridiculously good. They're my new food craving. Buy a few sweet potatoes, bake or microwave them, and top them with black beans, guacamole, and cheese! It might seem like a strange combination, but it's super healthy and actually delicious all together. I was inspired to make these by Peas and Crayons and her crazy good looking sweet potatoes (how amazing do those look!?). I made mine into a "recipe" but it's really just an idea. You could fill these babies with anything for a super healthy fall lunch. =D
Black Bean and Guacamole Stuffed Sweet Potatoes
yield: 1 serving
INGREDIENTS
1 sweet potato
1/4 cup black beans, rinsed
1 lime
1/2 avocado
1/2 tsp garlic powder
1/2 ounce sharp cheddar cheese, grated
salt, to taste
DIRECTIONS
Poke the sweet potato all over with a fork and microwave until soft (or use the oven). Slit a hole down the middle and open up the potato. Fill with the black beans and microwave for another 30 seconds. Squeeze some lime juice over top and sprinkle with salt. In a separate bowl mash the avocado, garlic powder, more lime juice, and salt. Scoop on top of the potato and top with cheddar cheese. Enjoy!
