This is a comforting way to start your day. Anyone who's been reading my blog lately knows that I've been in full blown pumpkin mode. You might not know this (but how could you not?), but I am 100% in love with homemade oatmeal. It's totally comforting, healthy, quick to make, and soaks up any flavors you add to it. It's like a big flavor sponge.
As an added bonus for moms everywhere, most kids love oatmeal and it's an easy thing to switch up. If you can't tell from the pictures below, this is a long overdue post. These are our pumpkin picking pictures from LAST year. Our pictures from this year are coming with another pumpkin post (I just love pumpkin and family). Still, pumpkin anything is still good straight up until Thanksgiving. After that I move on to cranberry, gingerbread, eggnog, and sugar plum fairies! It's feeling a little too festive in Massachusetts with all this snow, but I'm still pumpkin puree-ing up my pantry for the forseeable future.
Need more oatmeal in your life? Try these recipes:
1/2 cup pumpkin puree
1 cup milk
1/2 cup water
1/2 tsp ground cinnamon
1/8 tsp ground nutmeg
2 tbl sugar
1 cup old fashioned oats (not the quick-cooking kind)
slivered almond or pepitas (optional)
Whisk together the first six ingredients in a medium pan. Add the oats and bring to a boil. Turn the heat to low and cook, stirring constantly, until the mixture has thickened and the oats have softened, about 5 minutes. Top with almons or pepitas if desired. Serve!

I so love pumpkin too! Have you ever tried mixing pumpkin puree into instant pudding with pumpkin spice? It's so delicious and like pumpkin pie in pudding form. (I'm sadly not a baker like you are, so that works better for me than baking an actual pie -- though I have successfully made pumpkin pie on occasion.) P.S.
