Sticky Rice, Tomato, and Egg Lunch
I'm sort of obsessed with eating this meal lately. I make a big batch of Japanese sticky rice and top it with this homemade tomato sauce and a fried egg. The delicious runny egg yolk mixes with the salty spicy tomato sauce and creamy sticky rice to create an amazing bite of food. I don't use butter on the rice since the egg yolk is fatty enough, and because it's healthier without. In fact, this meal is really healthy even though I use white rice.
Tomato Sauce
28 ounce can whole tomatoes
2 tbl olive oil
4 cloves garlic, minced
1/4 tsp red pepper flakes
1/4 cup red wine
1 1/2 tsp salt
1 tsp sugar
1 tsp red wine vinegar
Pulse tomatoes in a food processor until pureed. In a skillet over medium heat add oil, garlic, and red pepper flakes. Sautee for about 1 minute. Add red wine to deglaze and reduce by half, about 5 minutes. Pour in pureed tomatoes and season with salt, sugar, and red wine vinegar. Simmer for 30 minutes.

Oooh, that looks oddly glorious. Love the egg consistency, just how I love it :)
THis sounds really good... I love eggs on rice. The tomato sauce sounds like it would be a fantastic combo.
